Evolution Icings are the product of extensive research and innovation by PreGel, which has further developed and applied its range of mirror and clear icings, but hasn’t changed or dropped its excellent chocolate icing or neutral icing.

This new, very colorful line of products covers the surface and edges of the dessert perfectly and maintains its perfect grip during thawing.

Black cherry, orange, caramel and white chocolate, along with strawberry, raspberry and pistachio...the colors are bright and do not allow even a glimpse of the underlying surface.

As far as flavor is concerned, the delicate taste of Evolution Icings does not cover up the taste of the desert, but instead complements and enhances it. PreGel offers a top-quality product that will not freeze, even at low temperatures, and does not leave a jagged edge when cut.

To make icing easier and more uniform, Evolution Icings are smooth and seedless.

How are they used? The procedure is very simple. The product is heated to 38°- 40° in a microwave oven and then mixed with a clean spatula.

A thoroughly frozen dessert is then placed on a special raised platform and iced from the center outwards. Any excess product is removed.

Finally, the icing is set by placing the dessert in the fridge at – 18° or in a blast chiller, and then decorated in any way you like.
